![]() 2 cups grated, blotted zucchini (unpeeled) 2 tablespoons green onions or chives 1/2 cup flour 1/2 teaspoon salt 1/2 teaspoon baking soda Pinch of oregano 2 large eggs 1/4 cup Parmesan cheese 1/4 cup vegetable oil Separate eggs, whip whites. Stir in the rest of the ingredients. Ladle into cast irin griddle heated to medium low. Use the edge of the spatula to spread the batter out. Cover with a glass lid, or regular pot lid. When close to dry on top (1 to 2 minutes) flip and cover again. Top with corn relish (best), sour cream, cream cheese, salsa, or whatever else strikes your fancy. |
