![]() My freshman year of college, a pizza place nearby offered shrimp on pizza, which I thought was pretty good. I’m probably more partial to thick crust than thin crust, and pizza aficionados think I’m crazy for liking Domino’s Pizza. I hardly ever eat pizza nowadays ‘cause I have to lose weight, but I guess I favor what the pizza chains call a meat lovers pizza. |

![]() I was a fan of pepperoni for a while but was never a fan of mushrooms. In fact, I remember a guy in my college dorm berating me for removing mushrooms from a pizza we ordered. What can I say? I don’t like them. The fact they grow in dank and dark cellars doesn’t help their cause. I’ve never eaten pizza with pineapple but think I object to it based on how I think pizza and pineapple taste together. |

![]() I moved up to dishwasher and then to cook by the time I was 14.. We made rectangular pizzas, sort of like the grandma style. I rolled out lots of pizza using an industrial rolling machine (doughsheeter) and cooked my pizzas without using a timer-just by looks– in our 2 big Blodgett ovens. We didn't use cardboard pizza boxes. We used a slim piece of waxed cardboard sheet wrapped with foil and butcher paper–all stapled with metal staples together. There was no delivery back then. My point is I have always been a traditionalist And so I never was a pineapple/ham on pizza type of guy because I believed that was too outrageous based on my experience. —--------------------- Until……last year.. Last year I made a thin crust pizza (cracker style) and all I had was cheese for my topping–until I saw a can of crushed pineapple in the pantry and premium smoked ham in the fridge. And jalapenos! Long story short, magic was made that night and I am now reformed. I felt vindicated after watching videos on a traditional Brooklyn pizza chain that uses dollops of sweet ricotta on their pepperonis pizza and/or Mikes Hot honey and fresh basil as a final dressing on finished pizzas. Lesson learned: Tradition is great and necessary, but requires innovation to progress! There are no bad toppings for any pizza! |
