It’s about keeping the Zugzwang intact.

Yes, queen takes knight is still mate in 2, so I was wrong. But check ruins mate in 2, so you got it

Would Bb3 work for this one as well?

Bb3 allows check at Qc6+ and so not checkmate in 2. It took me some time to understand that the move Bf6 is the only move which prevents the black queen checking the king and thus delaying checkmate until the 3rd move. All other moves allow check by black queen on either Qc6+ or Qe6 (taking white squared bishop).

e7 Bishop could move anywhere
The Bishop could move anywhere and it's mate in two.

No because if e7 bishop does not move to f6, then queen takes white bishop on e6 and checks king. Thus as there is no second move which gets king out of check whilst at the same time checkmating white king, then e7 bishop must go to f6.

It's clear that all the people giving (wrong) alternate solutions have not actually tried them out using the "Another Solution" feature. Why is this? It's quite simple and easy to use.

@snailmate
Because it's easier to be wrong than right.
